I'm just not there yet.
I like kale fine -- in salads, cooked with bacon in greens, etc. But with fruit? I'm a skeptic.
So I made up a kale- or spinach-free smoothie recipe this morning -- which is really easy to throw together. Perfect for non-cooking people like myself.
And maybe you could have thought of it yourself, but did you? Did you post it? (I promise I didn't see this recipe anywhere so if someone else thought of it first, congratulations.)
So here is my recipe...
Nut-Butter and Jelly Smoothie
Add to a large plastic cup:
- 1 ripe banana (the riper, the better)
- handful of frozen berries (I used mixed, but just a single kind is fine, too)
- 2 Tbs. coconut oil
- 2 Tbs. almond butter (or other nut-butter of your choice)
- fill the cup almost to the top with coconut milk (canned is fine, that's what I had)
Use a stick blender to combine thoroughly.
Drink with a straw.
(You could add some ice cubes before you add the liquid if you like a particularly cold smoothie, but for me on a winter morning, the frozen berries were enough.)

The idea behind this smoothie was to attempt to get more coconut oil in me since my chiropractor recommends six tablespoons a day (and I still can't seem to get past two); to add protein by way of the nut-butter; and to create something fast, simple and generally Paleo-friendly.
I'm surprised you haven't tried putting spinach in your smoothies--it's really good! In that it's good for you, but you don't taste it, and it makes it pretty. :) Just put a bunch of that fresh salad spinach. It does add a bit of texture, but I actually enjoy the texture that it adds.
ReplyDeleteI'll get around to trying it ... it's just kind of got me freaked out. I drank this veggie drink a friend had once and it tasted like grass. So I was done with veggie drinks for awhile (except V8).

I sort of did this Friday morning too. Banana, frozen strawberries, almond butter, and apple juice. Because I was out of coconut milk. I haven't heard about adding coconut oil, sounds like a good thing. My Paleo challenge ended with January but the new challenge is to eat non-Paleo things in moderation.
